Who’s ready for St. Patrick’s Day, we are! This is one of those holidays that even if you’re not Irish, you’ve grown to really love and look forward to. Starting with everything green, wishing upon little leprechauns with pots of gold, and getting in the spirit of feeling lucky.

As you know if you follow us, we take all our festive holiday spirit and creativity and put it into our breakfast. From cinnamon rolls to pancakes and even the occasional overdone charcuterie board. We always take our breakfast seriously!

This year, my oldest daughter has coined herself as the “pancake master” and will be showing off her skills on the griddle.  I always like to bring out the waffle maker, but my husband takes it a little further with colored eggs, fancy breakfast meats and always some sort of special surprise.
There’s so many fun ways to do breakfast especially for St. Patrick’s Day with its famous shamrock green. The symbols for the holiday are pretty easy to make and are very cheerful. If you just think rainbows and glitter and Gold and leprechauns enjoy, the ideas will start to flow.
Here’s a list  of ideas that we often use and you can bring to your Saint Patrick’s day breakfast or brunch:
      • green smoothies or “shamrock shakes “
      • green hard boiled or deviled eggs
      • Shamrock waffles
      • Rainbow pancakes
      • Lucky charm French toast
      • Rainbow fruit kebabs or a fruit board
      • Cereal rainbows
      • and of course Shamrock cinnamon rolls.
Here’s a video below of our shamrock waffles that we created by keeping out the heart waffle maker from Valentine’s Day. This was an easy one, as you will see in the video. Feel free to use this hack or use the idea to spark something similar for your breakfast or brunch.
 
I hope that this is inspired you to bring some fun and creativity to your breakfast routine for this and future holidays. It’s something that we have come to really love and enjoy time doing together, no matter how big or small. Lucky French Toast
Ingredients:

      • 2 Eggs
      • 1/2 Cup Milk
      • Cinnamon
      • Vanilla Extract
      • Lucky Charms
      • Whipped Cream

Directions:

      1. In a bowl, whisk the eggs, milk, cinnamon and vanilla extract
      1. Pour out the Lucky Charms in a large bowl
      1. Coat your bread in the egg mix and cover both sides with the cereal
      1. Air fry at 375°F for 3 minutes on each side
      1. Add Whipped Cream and garnish with more lucky charms
      1. Serve and enjoy!
